-
½ cup jalapeños, finely chopped (seeded for less heat)
-
3 cloves garlic, minced
-
½ cup fresh cilantro, chopped
-
¾ cup apple cider vinegar
-
1 tbsp sugar
-
1 tsp salt
-
½ tsp ground cumin
Instructions:
-
Prep the Ingredients: Wash, peel, and dice the tomatoes. Finely chop onions, peppers, jalapeños, garlic, and cilantro.
-
Cook: In a large stainless steel pot, combine tomatoes, onions, peppers, jalapeños, garlic, vinegar, sugar, salt, and cumin. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes, stirring frequently.
-
Jar the Salsa: Ladle the hot salsa into sterilized jars, leaving ½ inch of headspace. Remove air bubbles with a non-metallic spatula. Wipe rims and place sterilized lids.
-
Canning: Process jars in a boiling water bath for 15 minutes. Remove jars carefully and allow to cool completely. Check seals before storing.
Tips & Tricks:
-
For extra heat, keep seeds in the jalapeños.
-
Use firm, ripe tomatoes to ensure the best texture and flavor.
-
Let salsa sit for a week after canning to deepen flavors.
