Zesty Homemade Salsa Recipe

Ingredients:

  • 6 cups ripe tomatoes, peeled and diced

  • 1½ cups onion, finely chopped

  • 1 cup green bell pepper, diced

  • ½ cup jalapeños, finely chopped (seeded for less heat)

  • 3 cloves garlic, minced

  • ½ cup fresh cilantro, chopped

  • ¾ cup apple cider vinegar

  • 1 tbsp sugar

  • 1 tsp salt

  • ½ tsp ground cumin

Instructions:

  1. Prep the Ingredients: Wash, peel, and dice the tomatoes. Finely chop onions, peppers, jalapeños, garlic, and cilantro.

  2. Cook: In a large stainless steel pot, combine tomatoes, onions, peppers, jalapeños, garlic, vinegar, sugar, salt, and cumin. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes, stirring frequently.

  3. Jar the Salsa: Ladle the hot salsa into sterilized jars, leaving ½ inch of headspace. Remove air bubbles with a non-metallic spatula. Wipe rims and place sterilized lids.

  4. Canning: Process jars in a boiling water bath for 15 minutes. Remove jars carefully and allow to cool completely. Check seals before storing.
