4 cups sweet corn kernels (fresh or frozen)

2 cups red bell pepper, finely diced

1 cup onion, finely chopped

1 cup apple cider vinegar

¾ cup sugar

1 tbsp mustard seeds

½ tsp turmeric

Instructions:

Cook:

Optional Use Food Mill:
For a more uniform texture, run half of the relish through your food mill using the coarse disc, then mix it back into the pot. -
Can the Relish:
Ladle hot relish into sterilized jars, leaving ½-inch headspace. Wipe rims, apply lids, and process in a boiling water bath for 15 minutes. -
