  • Versatile: Pairs perfectly with hot dogs, burgers, grilled chicken, and sandwiches

  • Make Ahead: Canning lets you enjoy fresh summer flavors all year long

  • Easy: Simple steps, real ingredients, and minimal prep

Ingredients:

  • 4 cups sweet corn kernels (fresh or frozen)

  • 2 cups red bell pepper, finely diced

  • 1 cup onion, finely chopped

  • 1 cup apple cider vinegar

  • ¾ cup sugar

  • 1 tbsp mustard seeds

  • 1 tsp celery seed

  • ½ tsp turmeric

  • 1½ tsp salt

Instructions:

  1. Prep Your Veggies:
If using fresh corn, remove kernels from the cob. Dice red peppers and onions finely.

  2. Cook:
In a large saucepan, combine all ingredients. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, stirring occasionally, until thickened and vegetables are tender.

  3. Optional Use Food Mill:
For a more uniform texture, run half of the relish through your food mill using the coarse disc, then mix it back into the pot.

  4. Can the Relish:
Ladle hot relish into sterilized jars, leaving ½-inch headspace. Wipe rims, apply lids, and process in a boiling water bath for 15 minutes.

  5. Cool & Store:
Remove jars, cool completely, and store in a cool, dark place.
